Le Temps des Ceries refers to a song of the French Revolution. Axel Prüfer embarked on his winemaking journey with Le Temps des Ceries in 2003, following a period of apprenticeship with some of the most notable figures in natural winemaking, including Yan Rohel, Jean-François Nicq, and Eric Pfifferling. Prüfer’s vineyard is surrounded by forest. Full of birds, insects, herbs, flowers and wild boars! He is committed to protecting the natural ecosystem of the vineyard. He travels into the nearby village to collect human hair from local hairdressers to place around the boarder of the vineyard. Fun fact: human hair distract wild boars from harming the grape vines. His wines are fascinating, lively, and pure expressions of wild abundance.
Prüfer ‘La Peur du Rouge’ chardonnay grown organically on granite and quartz drinks like eating ripe nectarines over the sink. It’s one of our favorite expressions of chardonnay! We fell head over heals at first sip for his red wine ‘La peur du rogue’ - a silky soft expression of Grenache like plucking rose petals. Try with Pasta Alla Gricia.
