Sebastian Van de Sype

The estate of Sebastian Van de Sype was founded in 2020 when the family decided to start cultivating grapes and producing quality natural wines in the Castelvetro di Modena region of Emilia-Romagna. The vineyard is planted with Lambrusco Grasparossa di Castelvetro and a small parcel of Trebbiano vines. The ‘Ancestrale’ is a light sparkling ruby-red wine. It’s rustic and quaffable with notes of sour cherry, hibiscus, and dried herbs. This wine calls for a feast! Risotto with leeks, peas, and pecorino. Perhaps Steak and Caesar salad?
