Le Raisin et l'Ange was established in 1983 by Gilles Azzoni. Gilles pursued winemaking studies at Mâcon-Davayé in 1976 and gained experience working for conventional wineries in Pommard and Provence before founding his own estate in Ardèche.

Gilles Azzoni has long been a proponent of natural winemaking in Southern Ardèche and embraced organic farming practices as early as 1997. He was introduced to Gérald Oustric's initial experiments with sulfur-free vinification, which inspired him to transition his own production to natural winemaking. After retiring in 2015, Gilles handed over 5 hectares of the estate to young natural winemaker Samuel Boulay and 1 hectare to his son, Antonin, while retaining another hectare for himself.

Today, his son, Antonin Azzoni, manages Le Raisin et l'Ange as a négociant house, sourcing organic and biodynamic grapes from various growers throughout Southern Ardèche, including Jean-Daniel Ozil, Gérald Oustric, and Thierry Doulmet, in addition to using fruit from their own estate.
